Depending on the mobile device and the method of connection, this may be expected. See the table below for your configuration to see if you should avoid minimizing the Mevo app(s) and explanations of why this limitation exists.
Is a mobile hotspot considered cellular?
Any time your mobile device running the Mevo app is also your internet source for the Mevo app this would be considered "Cellular". Anything else, such as mobile hotspots which do get their signal from cellular, but output a WiFi signal would be considered WiFi.

Logitech Mevo Single Camera App
When utilizing the single camera app the Mevo is the encoder so the Mevo itself can send its feed directly to the destination. However, if you are using cellular data then the feed is sent through your mobile device therefore iOS devices must keep the
app in the foreground.
*Android allows this in the background, iOS does not.
Logitech Mevo Multicam App
When utilizing Mevo Multicam the Mobile device is your encoder, therefore the app must remain active to process the video feed. It must be in the foreground for iOS devices.

*Stage Manager
Stage Manager feature for iOS is a multitasking tool that allows you to run multiple apps without minimizing them fully on your iPad. Stage manager is an exception for these specific devices running it. It allows you to run both apps simultaneously. If using stage manager, then the answer is always, “Yes"

Can I walk away if I can minimize it?
So we've determined what scenarios you can minimize the Mevo app(s), but if I can minimize the app, does that mean I can walk away from the Mevo as well?

When using Mevo Multicam, it's important to keep in mind that the app on your mobile device is responsible for encoding your stream, even when it is minimized in some scenarios. If you move away from the Mevo, the signal will not be able to reach your mobile device, and the stream will be interrupted. To avoid this, you need to remain within 100 feet of your Mevo with a clear line of sight.
